The term biological, or - if you prefer - organic, is used to refer to the processes of cultivation, harvesting and transformation.
Today the protocol for organic cultivation in Europe has a codified legislation shared by all member states, which affects all stages, from production to processing, up to labeling.
Morettino's organic coffee comes from farmings where the use of any chemical substance is banned, thus fully respecting the environment.
The defense of coffee plants from outside agents is carried out through the use of substances of mineral, vegetable and animal origin, without the use of any kind of pesticides. The soil fertility is maintained and enhanced with natural fertilizers.
The harvest is made with the "hand picking" method, which consists of a selection of only ripe beans. The teams of pickers carry out continuous passages between the rows, with a frequency specifically designed to prevent the ripe fruits from rotting on the branches, selecting and picking only the red fruits by hand, thus guaranteeing the highest quality of the raw material.
Morettino is certified by ICEA, the Institute for Ethical and Environmental Certification. The entire supply chain is therefore monitored and certified from plantation to roasting, up to the end consumer.

Morettino coffees are roasted in a slow and natural way, using the Morettino method with clean hot air: an innovative, ecological and healthy method that enhances the organoleptic properties of the coffee. In fact, raw coffee is roasted through constant flow of hot air which, gently and slowly, enters the beans until it reaches their heart. The Morettino method with clean hot air is an ecological process that does not produce combustion fumes and is one of the foundations of the Morettino Green 2030 program. The clean hot air process allows the coffee to be roasted evenly and to enhance its sensory characteristics, amplifying the organoleptic properties of each individual bean.
